Lesson 14 - Codes & Guidelines

In this lesson, we'll discuss the codes and standards that affect the building, operation, and maintenance of your facilities. We will look at answers to the following questions:

  • Why is it important to have established standards and codes?
  • Which codes and standards organizations have the greatest impact on restaurants?
  • What particular areas of the codes have the most impact on day-to-day operations?
  • Why do we have to follow the rules?

In these photos, we see buildings that provide us with living and working environments. How do we know that the environments provided are safe, stable, functional, and pleasant? This is the purpose of codes and standards. To ensure that we have safe environments that foster and nurture work, living, and recreation, people have developed codes and standards through trial and error over centuries. The restaurant industry is no different. Tested and proven methods for constructing safe and functional buildings allow us to provide comfort for our guests, safety for our workers, and reliability for our business. Several agencies are responsible for the building, access, safety, and maintenance of a restaurant facility. We'll find out more about these agencies in the following screen!
